Unfortunately you cannot add a UDF (user defined field) to one of the default ALM graphs. I would suggest creating a ''New Business View Graph'' You can add your user defined field to the Business Views module in project customization (you must be a project admin to do this) then once you add the UDF to the ''Defect'' business view in project customization you should be able to create a business view graph with the UDF on the x axis.
