Can defect e-mail body format be modified?

One of our users has asked if we can modify the body of the defect emails to somehow highlight (or bold, etc.) the assignee of a defect and the defect’s status. We are wondering if 1) this can be done and 2) if this will affect all projects or just one. If it will affect all projects we probably don’t want to do it.
